Eggplant with Minced Pork Stir-Fry

Ingredients
- Minced Pork 100g
- Eggplant 1 whole (Slice in thin portion)
- Onion 1 whole (cut in small chuck)
- Garlic 4 cloves (chop in fine chuck)
- Sauce:
- Chilli Bean Sauce 1.5tbsp
- Oyster Sauce 1tbsp
- Fish Sauce 1tbsp
- Sugar 1tsp
- Vinegar 1 tbsp
- Water 80ml
- Sesame Oil 1tsp
- Steps:
Instructions
1)Heat pan and add 1tbsp oil, stir-fry onion and garlic add minced pork and Chilli Bean Sauce and stir-fry for about 1min until aromatic.
2)Add eggplant and all the sauce except sesame oil, stir well and cover to cook for 4-5 mins until eggplant are soften. Finally, add sesame oil and stir. It’s ready.
Tips: Add some vinegar to the water and soak the eggplant to prevent oxidizes and turn black. Or just cut it right before you cook.
