Garlic Chives Omelette
Garlic chives don't seem to keep that well in the fridge — does anyone have a tip for storing them? I bought a big bunch to make garlic chive dumplings, and used the leftovers for the simplest garlic chives omelette. The egg pairs beautifully with the chives, and a splash of fish sauce adds a savoury, umami kick.
Ingredients
- Garlic chives ~50g
- Eggs 3
- Fish sauce 1 tsp
- Sesame oil 1 tsp
- Salt
- Pepper

Garlic chives don't keep very long in the fridge — does anyone have a good tip for storing them? I bought a big bunch to make garlic chive dumplings, and had quite a lot left over, so I went with the easiest thing: a garlic chives omelette. The fragrance of the chives sits beautifully alongside the egg, and a small splash of fish sauce lifts everything with a savoury, umami note. Simple to make and very satisfying 😆

Wash the garlic chives and pat them dry, then chop into small pieces.

Beat the eggs, season with fish sauce, sesame oil, salt and pepper, then stir through the chopped chives.

Heat oil in a pan over medium heat, pour in the egg mixture, and pan-fry on both sides until golden. Serve straight away.
